GF, DF, VGN
Chia Ingredients:
1 can coconut cream
3/4 cup chia seeds (white or black)
1 TBSP maple
1 TBSP vanilla
OPTIONAL EXTRAS: flax seeds, desiccated coconut, nuts, berries…
Whisk the coconut cream, maple and vanilla. Mix in the chia seeds until fully combined. Let sit for at least 1 hour before eating. Serves 4.
Rhubarb Compote
Cinnamon
Juice of 2 oranges
200 g rhubarb
1/2 TBSP coconut sugar / maple syrup
Put the rhubarb, orange juice, sweetener and cinnamon on low heat and cook for 15 minutes or until jammy. Cool.
Assemble
We love our chia mixture with some rhubarb compote, fresh berries, coconut yoghurt, coconut flakes and caramelised bukinis. You could also do mixed berry jam, banoffee, strawberries & cream or even just with fresh fruit. It is so easy to do and makes grabbing breakfast SO MUCH easier in the morning.
